Foster & Dalton kombucha tea is ‘raw’ kombucha i.e. not pasteurised like many of the mass-produced kombuchas out there, and so it continues to ferment in the bottle, creating more, super healthy, probiotic bacteria, antioxidants, enzymes and amino acids – although at a much slower rate once it is refrigerated, after which it may be safely stored for anything up to a year!

It is made, by hand, on a farm on the Highveld, just 20 minutes north of Fourways, using fresh spring water, green and black tea and sugar, to which is added the ‘magic’ SCOBY (Symbiotic Culture Of Bacteria & Yeast) to dine on the ingredients and ferment the brew.

Our primary product is a 750ml glass bottle – again, unlike most of the mass-produced product that comes in plastic. However, due to customer demand and because we understand the issues of bulk and weight, we also offer our kombucha in 1 litre and 330ml plastic bottles.

What we believe makes our kombucha a superior product is the fact that we ferment our brews for longer – a minimum of 14 days before flavouring and bottling (the latter adding a further two days) and then into refrigerated storage. From simply tasting ‘the competition’, we simply do not believe that ‘our competitors’ ferment their ‘booch’ for as long, because most of their product just tastes so incredibly sweet to us. Fermenting for longer builds up the volume of beneficial enzymes, bacteria and amino acids, which also means that our beverage has even greater health benefits.

We also offer a continuously changing range of flavours through the seasons, reflecting which fruits, herbs and spices are currently readily available in South Africa. In addition to the standard, non-flavoured ‘Original’, to date we have also offered a range of natural flavours including: apple, pear, plum, grape, lemon, lime & lemongrass, cinnamon, ginger, papaya, litchi, peach, pineapple, mint, lavender, apricot, black cherry, strawberry, blackberry, raspberry, blueberry, cranberry, passion fruit, carrot and orange, orange and cardamom and watermelon – to name but a few and there’ll be more!
